The largest mangrove forest and second-largest wetland across the two islands, Caroni Swamp is home to Caroni Bird Sanctuary, a designated Important Bird Area supporting a massive population of scarlet ibis and other water birds. A traditional Trinidadian dish, bake and shark is a street food dish of fried flatbread, shark meat and vegetables elevated with a sauce. In response to environmental issues, many stalls now serve the dish using catfish and ray as more shark species become endangered. It may look like a palatial residence, but Queen’s Royal College is actually a secondary boarding school, notable for its German Renaissance architecture. The most northeasterly village on Trinidad, Toco is the closest point to Tobago and draws visitors thanks to its rugged and dramatic coastlines, bays, beaches, coral reef, and Toco Lighthouse. Fort King George, situated in Scarborough, was constructed in the late 18th century by the British. The fort today retains its original cannons, as well as the 35,000-gallon underground brick water cistern system.
