Aqua Expeditions regularly seeks to work with award-winning chefs to take guests on culinary adventures featuring innovative menus inspired by each destination’s culture and using local produce. Aqua Expeditions recently revealed three exclusive chef-hosted departures for 2025 with Australian chef and restauranteur Benjamin Cross and Peruvian chef Pedro Miguel Schiaffino.

Sail with Chef Schiaffino on Aqua Nera sailings departing June 3 and Sept. 30 and traveling the Peruvian Amazon. Known as the pioneer of rainforest-to-table cuisine, Schiaffino’s menu blend Peruvian ingredients with traditional techniques. Schiaffino is known for transforming unusual ingredients into authentic dishes, using fresh and locally sourced produce from the rainforest. On these sailings, 70 percent of the ingredients will be sourced within Amazonia. Menus may include grilled tiger catfish wrapped in bijao leaf, and paiche fish ceviche with sweet potatoes and fresh corn. Aqua Expeditions also works with Schiaffino on conservation projects.

Chef Cross sails Aug. 23, on an Aqua Blue departure through Komodo National Park in East Indonesia. Cross promises inspiring food that draws inspiration from Indonesia, Europe and the Mediterranean. Dishes could include 48-hour beef short rib rendang, Balinese suckling pig with bumbu Bali, freshly handline-caught fish grilled with Balinese sambal and more. Cross will incorporate the region’s signature spices and flavors into the onboard menu for a multisensory journey.
