There’s a lot more to Mexican food than tacos and nachos. On Cinco de Mayo, don’t waste your time at Taco Bell or a Mexican chain restaurant. Celebrate the Mexican army’s victory in the 1862 Battle of Puebla during the Franco-Mexican War by enjoying traditional Mexican cuisine from Puebla.
Puebla is known as a culinary hot spot in Mexico. The city has rich culinary roots dating back to pre-Columbian inhabitants selling an early version of street food outside places of worship. Several iconic Mexican dishes came out of Puebla. Mole poblano was created in the 17th century. Mole is made by grinding up ingredients including chilies, spices and nuts to form a dark, rich sauce. Chalupas are a street food dish from Puebla made with fried tortillas topped with salsa, shredded meat, chopped onion and sometimes queso fresco. The dish chiles en nogada symbolizes Mexican independence and is made with ingredients the color of the Mexican flag: red, white and green. It consists of a poblano pepper stuffed with a ground meat mixture, dipped in batter and fried then topped with a rich, walnut sauce and pomegranate seeds.
Mexico is a large beer producer, so pick up a six-pack — or two — to pair with your meal. Corona, Modelo, Pacífico and Dos Equis are among the most popular Mexican beers in the United States. If tequila is more your speed, pick up some Mexican-made Patrón, Jose Cuervo or Don Julio to make mixed drinks.
