Mezcal is having a moment. The spirit hails primarily from Mexico and actually refers to any liquor made from agave, which means tequila (made specifically from blue agave) is technically a type of mezcal, but the variety that is currently sweeping the States is that famously smoky sip that can be produced from the fruit of about 30 varieties of agave plant.
