To celebrate this year’s Dragon Boat Festival, The Peninsula Hong Kong introduced delicious and festive treats for guests. One of the festival’s customs is for celebrants to enjoy traditional savory rice dumplings together, and the hotel’s special dumplings timed to the holiday paid homage to that tradition.
Spring Moon’s Chinese Cuisine Executive Chef Lam Yuk Ming created four rice dumplings in seasonal flavors:
Premium Glutinous Rice Dumpling
The traditional dumpling, pre-seasoned with abalone sauce for deeper flavor, blended diced fresh abalone, dried Middle Eastern abalone, dried scallops and Jinhua ham.
Deluxe Glutinous Rice Dumpling
Made with a bamboo and lotus-leaf “skin,” the filling of Hungarian pork marinated in roseì wine made these a decadent treat.

“Golden Twins” Glutinous Rice Dumplings
A paired set with complementary flavors, these included the Tangerine Peel and Red Bean Glutinous Rice Dumpling and accompanying Lotus Seed Paste Glutinous Rice Dumpling, boasting a creamy filling made with ground lotus seeds.
Supreme Glutinous Rice Dumpling Gift Set
Spring Moon showcased its world-famous XO Chilli Sauce, first created by the restaurant’s chefs in 1986, with a secret blend of chilies, dried scallops, dried shrimp and spices, in a special boxed gift set with Premium Glutinous Rice Dumplings.
Gift sets and artisanal condiments were also available for purchase.
