Las Vegas’ Bellagio Resort & Casino is opening a new, highly anticipated restaurant this fall. CARBONE Riviera will take over what was once French restaurant Picasso, and offer a seafood-driven menu with an Italian-American focus. CARBONE Riviera is an extension of CARBONE, one of many concepts crafted by Major Food Group, creator of luxury dining experiences all over the world, from Miami to Riyadh, Paris to Seoul.
Jeff Zalaznick, co-founder, Major Food Group, said, “It is a tremendous honor to carry forward the incredible legacy of The Strip’s most important dining room with CARBONE Riviera, a new member of the CARBONE family that we have dreamed about creating for many, many years. At last, thanks to our esteemed partners at Bellagio, we have found the perfect home for what will be the greatest seafood restaurant in the United States.”
CARBONE Riviera’s seafood offerings will incorporate daily sourced seafood from all over the world, as well as a whole fish program. Expect menu items such as salt-baked branzino, grilled Dover sole, spicy lobster meatballs and two-pound lobster pasta.
An additional change is coming up at Bellagio that will likewise appeal to luxury travelers: A Riva mini yacht, one of only 18 in the world, will soon be available for guests to ride around the property’s Lago di Como.
