Popular Nashville Sushi Spot Welcomes Master Sushi Chef

888, a Japanese restaurant and vinyl record listening lounge in Nashville, recently announced the appointment of Chef Kiichi Okabe as Master Sushi Chef. Chef Okabe brings more than 20 years of experience spanning Michelin-starred kitchens, award-winning restaurant openings and global fine dining leadership. The sushi hot spot, at the corner of 8th and Clarke Place, is excited for Okabe’s unmatched artistry and innovation.

Chef Okabe has earned international recognition for his mastery of both traditional Japanese techniques and modern interpretations. He elevated the sushi experience with premium seafood and inventive presentations as executive sushi chef at Kuro in Seminole Hard Rock Hotel & Casino Hollywood. Under his leadership at OKKU, in Dubai, the establishment was named “Best Japanese Restaurant” in 2014 and 2015. He also held key roles at Sushi Roku Las Vegas and Katana.

 

Additionally, Chef Okabe has served as an instructor, consultant and owner-chef of Café de Japon in Las Vegas, which was celebrated for its authentic kissaten-style menu. Before the Nashville move, he most recently contributed his expertise to Tao Group Hospitality and Three Oaks Hospitality, introducing menus that harmonize Japanese, French and Italian influences with sustainability and seasonal sourcing.

Chef Okabe will reimagine the sushi experience at 888 with his signature precision and flair, introducing nigiri, bold specialty rolls and pairings that celebrate the freshest seasonal ingredients.

 

The intimate, design-driven 888 is inspired by the jazz kissas of Japan, fusing Japanese cuisine and music. The venue offers 100 seats, two sushi bars, a private dining room and a central cocktail bar.
