Oyster afficionados know about the “R-month” rule (claiming one must eat oysters only in months with an “r,” or September–April), making winter the peak time to truly savor and indulge in fresh oysters. Winter is special when it comes to North Carolina oysters, with the state’s from-the-farm varieties often referred to as the “Napa Valley of Oysters.”

This Nags Head eatery sources oysters from local watermen and farmers. Oyster dishes come with your choice of accompaniments like Champagne Mignonette (shallots, honey, lime and Champagne vin), SharkBite (grated horseradish, blood-orange puree, cilantro and red wine vin) and N.N. Dive Sauce (hot sauce, onion, garlic and cilantro).
Sunny Side Oyster Bar, Williamston
For 90 years, this restaurant has drawn diners to its horseshoe-shaped counter to watch oysters be shucked before their eyes. The restaurant operates depending on the wild harvest season, ensuring oysters are fresh and tasty.

Rx Chicken & Oysters, Wilmington
James and Sarah Doss transformed this institution into a must-visit for oyster lovers. The restaurant farms its own Lucy Beas oysters in Stump and Topsail Sound.
Elijah’s Oyster & Fish Camp, Wilmington
Soak in waterfront views at this restaurant, complete with roasted and raw oysters. Roasted oysters include Carolina Firecracker (smoky roasted poblano pimento cheese topped with pickled red onion) and The Golden Miso (kimchi butter with a spicy miso kick and topped with sesame seeds and fresh scallion).

Sea Level NC, Charlotte
Paul Manley of Sea Level NC grows his own line in the coastal Sea Level community and, on weekdays from 2 to 6 p.m., enjoy Oyster Happy Hour with $1.50 oysters.
Seraphine, Durham
This restaurant earned a place in the newly released MICHELIN Guide American South. The fine-dining spot serves both raw and broiled oysters, with broiled oysters available in Rockefeller, chili-lime butter or “Dragos style.”
Chef Dean Neff received a 2024 Outstanding Chef nominee, and his affinity toward fresh and local ingredients is best showcased in the restaurant’s raw and baked oysters. Choose from Mimosas, Slash Creeks or New River Pirates raw oysters.
