Subsix at Niyama Private Islands Maldives, set half a kilometer out to sea and 6 meters below the sea’s surface, has been the setting for many novel experiences, like midnight glow parties and more, since its opening more than a decade ago. And now, the restaurant and resort proudly unveil another first as Subsix unveils a new Nikkei tasting menu that blends Japanese tradition with Peruvian boldness. Subsix is surrounded by a wall of glass.
Highlights of the five-course tasting menu developed by Executive Chef Thierry Vergnault include scallop ceviche, wahoo tartare and buttery cod. The meal can also be paired with a curated selection of sake or wine.
“With a setting as extraordinary as Subsix, nothing less than an extraordinary menu will do,” said Chef Vergnault, “one that intrigues all five senses and excites the palate with every bite. And as with all our restaurants, we take great pride in showcasing fresh, quality ingredients straight from the beautiful waters that surround.”
Chef Vergnault oversees the nine restaurants and bars at Niyama. The Nikkei tasting menu at Subsix is available daily, 12–2:30 p.m.; reservations are highly recommended.
