It’s no secret New York City is the place to go for all types of cuisine, especially noodle specialties from China, Japan, Cambodia, Thailand and beyond. But where to go exactly? These five noodle restaurants are good places to start:
Expect a vast array of noodle dishes here, ranging from bold to sweet to sour to salty to even the tongue-numbing flavors of Sichuan cuisine. Explore the restaurant’s richly seasoned, chile-laced noodle bowls, as well as the gentler, broth-forward preparations. Highlight noodles include the pan-fried noodles, chow fun noodles, dan dan noodles and Singapore Mei fun noodles.

Here, you’ll find comforting and hearty Khao Soi Chiang Mai, an iconic noodle dish from northern Thailand. Dishes are made by Chef Chuck Valla, from the region, and this specific noodle plate comes in choices of chicken or beef, complete with bouncy noodles imported from Chiang Mai, along with pickled mustard greens, red onion and crunchy fried noodles. You can even upgrade the dish to A5 wagyu.

Chef Craig Koketsu crafted a menu blending culinary traditions from Vietnam, Thailand, Cambodia and Laos. The drunken lobster noodles and scallion glass noodles are particularly popular, the latter of which features vermicelli noodles tossed with soy sauce and garnished with scallion.

Newly opened, Rulin centers on a noodle program showcasing hand-pulled and knife-cut noodles served both dry and in flavorful broths. The restaurant’s dan dan noodles with lap yuk pork belly and Sichuan vegetables in chili oil, Rulin noodles with bone-in short rib and mustard pickles in chicken broth, and country duck noodles enriched with soy sauce are standouts. There’s also the classic noodle soup with poached chicken and house-made mustard pickles, as well as a Lanzhou-style beef noodle soup with braised shank and turnip.

Also a new establishment, Bar Manje taps into lesser-known but equally delicious cultural crossovers of Chinese and Caribbean cooking with dishes like spice beef lo mein. Here, tender beef and cabbage are tossed with noodles in a savory, five spice-infused sauce.
