Oaxaca is well on its way to becoming a foodie capital in Mexico. Here are some traditional dishes you have to try when you’re in town.
Wherever you go, you’ll see signs for tlayuda. These large, crispy tortillas are made from corn and topped with beans, meat and cheese for a delightful, crunchy meal.
Another local favorite are garnachas, small corn tortillas fried and topped with whatever you want. Usually served as a starter, it can be hard to leave room for the main course.
Up next is the original Mexican barbecue, prepared by slow-roasting goat or lamb in maguey leaves in the ground. It’s incredibly tasty with onions and cilantro in a tortilla.
All over Mexico you will see Oaxacan string cheese for sale, such is its popularity. Make sure you try some on its own or as a topping for other dishes.
This next entry isn’t for the squeamish, but it might excite those who like exotic foods. Chapulines, or roasted grasshoppers, are an Oaxacan specialty and you’ll see them everywhere. You can usually get them as a bar snack as you sip on a mezcal, the local spirit of choice.
