Famous Cheese Conveyor Belt Restaurant Coming to New York City

In early 2026, New York City’s former Lord & Taylor’s department store, in Midtown, welcomes Shaver Hall, a sprawling food hall set to include more than 11 food stalls, two full-service bars and the viral cheese conveyer belt restaurant. We’ve seen sushi conveyer belts, and now cheese conveyer belts have hit the food scene.

 

How does it work? Diners at Pick & Cheese sit at the counter and watch the slow-moving conveyer belt showcase plates beneath glass lids. Each plate features artisan cheeses of all types, and cheeses pair with accompaniments like tomato, rose, Turkish delight or even chili jam. Diners simply pull what they fancy and enjoy. There’s even a selection of wines to complement dishes.

 

Pick & Cheese originates in London, started as the Cheese Truck in 2014 before transforming into Cheese Bar.

 

In addition to this innovative dining concept, Shaver Hall, from The Food Hall Co., will boast a full-service omakase restaurant from Chef BK Park. Park currently runs Chicago omakases Mako Chicago and Juno Sushi, and this third venture brings his craft to the Big Apple.

 

Other dining outlets within the food hall include Tallow Steakhouse, a Korean fried chicken restaurant, a pizza venue and New York-based Taqueria Al Pastor. Food stall vendors set to occupy the hall see a blend of Mediterranean companies like Zazu and pasta-focused eateries like PastaSole.

 

More vendors will be announced in the near future.
