The Diplomat Beach Resort Announces New Culinary Program

The Diplomat Beach Resort recently announced the debut of its five reborn restaurant concepts, redefining its culinary landscape and marking a key milestone in the resort’s extensive renovation. The Diplomat is currently evolving into Signia by Hilton, with the official brand debut anticipated in May 2026.

“Long known as a top oceanfront dining destination in the area, the updated venues stand to further enhance the guest experience,” said Brian Abel, senior vice president, food & beverage operations & development, Americas, Hilton. “As The Diplomat looks to start its next chapter, the resort’s culinary renaissance embodies Signia’s principles by infusing design-driven spaces, top-tier service and destination-led dining with passion and creativity that define every plate.”

Start the day at Palmea Kitchen, a breakfast café serving American classics elevated with Mediterranean flavors, led by executive sous chef Michelle Milz. Think dishes like orange blossom-crusted French toast garnished with medjool date marmalade and mascarpone, and shakshuka made with harissa tomato stew and finished with tahini aioli and feta cheese. Indoor and outdoor seating available.

At Playa, a beachfront bar and grill, guests enjoy bold Latin flavors with a laid-back ocean vibe, also led by Chef Milz. Crave-worthy dishes include lobster quesadilla, freshly cut ceviche de coco and a smoky parillada.

Solara is an all-day lounge experience within The Diplomat’s newly renovated lobby space. The bar boasts rich green tiling, lush foliage and floor-to-ceiling windows overlooking the pool and ocean, while the menu features Mediterranean-inspired dishes.

The Press is an all-day café offering fresh, hand-crafted pastries, sandwiches, smoothies, juices and more.

The resort’s signature steakhouse, Diplomat Prime now boasts a clean, modern aesthetic. Helmed by chef de cuisine Jorge Negron, the kitchen showcases the finest cuts of filet, wagyu and dry-aged steaks, and works with local purveyors to source fresh seafood and vegetables. Menu highlights include 45-day dry-aged cuts, braised short rib, Maine lobster fra diavolo, A5 Japanese wagyu and a full caviar selection. The craft beverage program is designed with intention and not to be missed. Diplomat Prime’s an all-new patio brings lively energy into the hotel.

Together, these five concepts, along with grab-and-go at The Canteen and in-room dining, comprise the resort’s culinary offerings, with further plans to debut luxurious Verandah Social Club, a private, adults-only pool and beach club, in early 2026.
