Cuba spent years struggling to get basic ingredients due to the economic blockade. While ordinary Cubans still eat a basic diet, visitors are now able to pay a premium for great food. Here are some of the best dishes to keep your eye out for.
Ropa Vieja
Hands down a classic Cuban dish you will find all over the island — shredded beef in a tomato and pepper sauce, usually served with rice and beans.
Cuban Sandwich
Another dish you’ll find everywhere, this sandwich consists of Swiss cheese, roasted pork, ham and dill pickles in a white roll. The best ones come toasted.
Vaca Frita
Skirt steak in red vinegar with herbs, braised until tender. A rare beef dish in a country dominated by pork.
Lechon Asado
This is usually one for special occasions, when a whole pig is roasted in a barbecue covered with banana leaves. It’s spectacular if you can find it.
Chicken Fricassee
This dish isn’t unique to Cuba, but it’s popular on the island. It’s hearty and good to eat if you need to warm up.
