Travel isn’t just about seeing, it’s also about doing, so don’t just take part in typical touristy activities. Destinations offer experiences unique to each place, and New Brunswick, Canada, is no different. In fact, this Maritime province is so packed with immersive experiences, you’ll have a hard time deciding what to do in your limited time here.
Take a Crash Course in Caviar and Conservation
At Acadian Sturgeon & Caviar, you can join a small team to catch short-nose sturgeon for scientific study. Then, when back on land, tour the facilities and partake in Caviar Academy, a multicourse, caviar-tasting experience led by owner Cornel Ceapa. Ceapa, a scientist, conservationist and fisherman, explains how this ancient species ties into modern sustainability efforts.

Join a Photography Workshop in the Forest
Book a tour and photo workshop with Nathan Robinson, a professional wildlife photographer and licensed nature tour guide, to both spot and snap pictures of moose, bear, lynx and other elusive creatures. Robinson’s tours are low-impact and designed for those wanting to learn how to photograph wildlife responsibly and gain a deeper understanding of the landscape. No experience is needed to join, either!
Experience Geological Time Travel
Travel back in time through rocks and fossils at Stonehammer UNESCO Global Geopark, a region spanning nearly 1,0000 square miles. The first Geopark in North America, Stonehammer allows you to study geological processes, fossil records and the movement of tectonic plates. The park features coastal exposures, rock outcrops and sites like Reversing Falls (where you can observe the effects of ancient continental collisions).
Become a Houseboat Captain on the St. John River
Take a short online course to earn your Pleasure Craft Operator Card and become captain of a luxury houseboat with Lakeway Houseboat Vacations in Fredericton. These floating cottages come with hot tubs, rooftop dining, kitchens and even water slides.
