Rawsome Vegan Baking Cookbook

Something about baking always eluded me and after years of trying, it is still not my strong suit. I have recently gotten into vegan desserts and quickly fell in love with the Rawsome Vegan Baking, by Emily von Euw, when I realized there was no baking required.

 

No need to preheat or non-stick spray a bunch of pans. All this “cookbook” requires is a food processor and super-food ingredients. With dates, nuts, coconut oil, bananas, peanut butters, avocados and frozen fruit, one could basically make more than half the recipes in the book.

 

One of my new favorite recipes is the chocolate fudge bar. The first layer of crust is just almonds and dates in a food processor, then a layer of coconut oil blended with cashew butter and liquid sweetener. Follow that with a layer of coconut oil blended again with liquid sweetener and cocoa powder. After refrigerating for a few hours, the bars can be cut up and they taste just like a flour-less fudge brownie.

 

The shopping list for the desserts can be a little expensive, especially compared to classic baking needs like flour and sugar. The clean up can also be a bit daunting with all of the blending, but the overall dessert-making process, for me, was much more enjoyable than actually baking.

 

The final product for the recipes I have tried never look exactly like the picture, but based on their taste it is hard to care.
