Experience Australian Indigenous Dining at Ayers Rock Resort

To experience Australian Indigenous dining in an intimate, unique atmosphere, look no further than Ayers Rock Resort and its Tali Wiru dining experience, available nightly through mid-October. Each dinner is limited to 20 guests.

 

Meals are set atop a dune overlooking Uluru and Kata Tijuta. With didgeridoo music in the background, guests arrive at sunset and are welcomed with Champagne and canapés. Over the evenings, guests are treated to four courses of native ingredients for an artfully designed tasting menu paired with Australian wines. The evening ends with Indigenous storytelling and warm drinks around a fire.

 

The Tali Wiru dining experience is available and changes each year; this year’s menu highlights native ingredients such as green ants, quandongs, desert lime and saltbush. Canapés include options such as kangaroo tartare and gin-compressed cucumber with green ant and celery salt, followed by items on the broader tasting menu, such as black rice truffle risotto and wagyu beef with aged king brown mushrooms. Desserts include options such as desert lime brûlée.

 

The Tali Wiru dining experience is $385 per person and takes approximately four to five hours. Cost of the experience includes return hotel transport. The experience is only available to diners ages 15 and up.
