As you drive west on Route 60 from Socorro, you inevitably wonder if you have gotten lost. Wending through the landscape you encounter a pretty kind of monotony. Eventually, though, the trees thicken and you see some other cars on the road. You have arrived.

Pie Town, N.M., is named after a dried-apple pie served at a bakery that existed on this site in the 1920s. You can find pie here all year-round, but the best time to go is on the second Saturday of September. This is the day all of the town members come together to celebrate the Pie Town Festival.

In addition to the local restaurants that specialize in this culinary delight, there are pie stands. Food trucks serve pulled-pork sandwiches and tacos to give you a break from your sweet tooth. You might also want to enter the pie-baking contest, cheer on the horny toad races and take a look at the flea market. Goodwill emanates from this town and people come from neighboring states just to get a taste of the slightly spicy New Mexican apple pie.

Be warned when you get home from Pie Town, you will want to bake a New Mexican apple pie. Try this recipe from the Pie Town Café. The type of chilies used in this recipe are hatch chilies from the Hatch Valley in New Mexico. You can get them by mail order or, better yet, just stock up on them while you are in Pie Town.
