At the far eastern tip of Cuba sits the historic city of Santiago, famous for its rich musical heritage and pivotal role in the revolution. Here is your guide to spending a day in town without breaking the bank.
Start off your day with breakfast at Restaurante Aurora before heading to Parque Cespedes to visit the cathedral. Here you can climb one of the impressive neoclassical towers for a panoramic view of the city and the neighboring bay ($1).

From here, take a taxi ($15) to the Castillo de San Pedro de la Roca del Morro (entrance $5), a fort that guards the entrance to the Bay of Santiago. The well-preserved fort was attacked by pirates, the British and later overlooked naval battles between the Spanish and the United States, so it is steeped in history.
Head back into town for lunch at La Carreta, a family-owned restaurant which offers great surf-and-turf platters for just $10 with a beer. After you have digested your food, it’s time to hit Casa de la Trova, where daily afternoon shows from local musicians allow you a taste of traditional Cuba (free entrance, cocktails $3).
Take a short walk to the Rum Museum ($2) to find out about the fiery spirit that makes those cocktails you’ve been drinking so delicious. You’ll be given a shot of the local Santiago de Cuba rum before you leave, which will set you up well for dinner.

Compay Gallo is often cited as the best restaurant in Santiago, and it certainly doesn’t disappoint. The lamb dishes are especially good and at $15 with two beers it’s a relative bargain.
If you want to carry on the festivities, you can sample some more rum at Patio ARTex ($2.50 per cocktail).
