Every year sees its gustatory obsessions, and 2015 is seeing the rise of the flavor-blasted, creatively inspired, gourmet donut. Shops have cropped up across the nation, offering delicious pastries with flavor combinations including anything from bacon to sage to Champagne. Here are some of the hottest trendsetters right now:

The Dominique Ansel Bakery in New York City skyrocketed to foodie fame with its trademark Cronut, a croissant-doughnut hybrid that’s inspired lines of people wrapping around the block to get one. Every month comes with a new designer flavor. In the past, they’ve offered Rose Vanilla, Blackberry Lime and Strawberry Balsamic and Mascarpone.

The Holy Donut in Portland, Maine, offers a homegrown take on the gourmet donut, made with local Maine potatoes. Some of their more unique items include sweet potato donuts made with a ginger glaze and bacon-cheddar-filled donuts.

Glam Doll Donuts in Minneapolis, Minn., features fun raised, filled and cake donuts with names as unique as their flavors. They’re best known for their filled donuts, like the Bombshell, made with spiced Mexican chocolate and cayenne pecans, or the Girl Next Door, filled with provolone and muenster cheeses.

In Somerville, Mass., Union Square Donuts has a menu filled with flavors like berry pistachio, sea-salted bourbon caramel and pink lemonade. They’re perhaps best known for their maple bacon donut, topped with maple frosting and real bacon slices.
