If your budget and time allow for only one meal out in Buenos Aires, it should be Proper. Located in the trendy Palermo district of Buenos Aires, the restaurant itself is located in a former mechanic shop. As soon as you walk in you can tell you’re in for a unique, edgy experience.
Young, hip staff with sleeve tattoos and red handkerchiefs tied around their head will lead you to a table in the low-lit dining room. Every seat in the house has a view of the open kitchen where the staff is hard at work.
Most of the food is cooked over open flame. A dynamic young duo, Chef Leo Lanussol and Pastry Chef Augusto Mayer, opened the restaurant to bring a new flare to traditional, wood-fired Argentinian dishes. Their hard work paid off and Proper debuted on Latin America’s 50 Best Restaurants list last year.
The menu is made for sharing small plates, so bring your appetite and prepare to sample a lot of mouthwatering dishes. What may strike you the most about Proper’s cuisine is the melody of wild flavor combinations that don’t seem like they should taste good together, and yet they do.
Proper does not take reservations, so be sure to show up at least 15 minutes before they open the doors at 8 p.m. to snag a spot.
