Start the day early with breakfast ($7) at Amor y Cafe, a cozy little spot that will set you up for the adventures which await on the water. As the sun begins to heat up, arrange to take a boat out with one of the local fishermen ($40 with snorkels and fishing equipment).

Spend the morning snorkeling with sharks and rays on the reefs, before heading out into deeper waters to try your hand at fishing. The fish here are so abundant it doesn’t take a lot of skill to land a jack or a snapper, which you’ll be able to keep and cook later.

Head back to land in the early afternoon and make your way to the famous Lazy Lizard bar on the split in the middle of the Caye. Swim across to the other side of the split before you drink too many beers, or the lethal Lizard Juice ($5 for two drinks during happy hour).
Take in the beautiful sunset as you sit looking over the sea, before heading to the Wish Willy restaurant ($15 dinner and drinks). The friendly staff will be more than happy to cook your catch of the day as you while away the evening drinking rum punch and settling into the very relaxed pace of life on Caye Caulker.

Once you have digested your food, make the short stroll down the main strip to the Oceanside Nightclub ($15 for drinks), where you can carry on your evening to the sounds of reggae and punta music.
