Seattle’s dining scene is thriving and growing, with so many outstanding choices for locals and visitors that your head will spin with the possibilities. Long one of the city’s best restaurants — but dropping off the “new and hot” radar — is Tilth, set in a welcoming Craftsman house in Seattle’s Wallingford neighborhood.
This is Maria Hines’ flagship restaurant, the one that earned her recognition from the James Beard Foundation. Her food is unfailingly superb, as is her attention to and respect for high quality, local and organic (when possible) ingredients. She’s so thorough she’s earned certification from Oregon Tilth, which has a rigorous certification process. Tilth, along with Hines’ other two Seattle restaurants, are the only ones in the city to earn this prestigious designation.
As such, her carefully assembled plates are each an ode to their parts. Locally raised, organic and grass-fed beef is cooked perfectly, paired with the season’s freshest vegetables. Delicate soups and other small plates should be eaten slowly, savoring their subtleties and appreciating their preciousness. This isn’t food to be scarfed; it’s to be contemplated, just as the chef and farmer have done at each and every turn.
